Offal

Also called variety meats, offal comprises the edible internal parts and some extremities of a carcass. Offal is divided into two categories, white and red. Almost as trendy as bone broth right now. 

Red – Kidneys, heart, liver, tongue, liver, and spleen
White – Bone marrow, testicles, sweetbreads, stomach, mesentery, and heads.
