The youngest Michelin Star recipient in Italy, Chef Augusto Valzelli, is cooking for guests at DIFC private business club, The Capital Club, from October 13th to 21st
An old childhood friend of Capital Club’s Head Chef Enrico Paiola, Augusto is collaborating with Enrico in creating a memeorable member’s business lunch for one week only.
There will also be four special nights (13th-14th & 20th-21st October) where both members and non-members will be able to enjoy a seven-course tasting menu from his restaurant ‘La porta Antica’, prepared by Augusto himself. His technique in Italian cuisine is the epitome of authenticity, while still employing modern techniques and presentation.
“While presentation is very important, the flavour is what springs emotions and feelings in a client,” the guest Chef said.
Augusto’s love of cooking began at the age of 11 when he participated in a cookery class. Baking bread, pizza and focaccia really sparked his passion, which he followed this all the way to university. Upon graduating, Augusto worked with Michelin-star Chefs Davide Botta and Andrea Sarri.
Agrodolce restaurant in Imperia achieved a one-star Michelin rating just a month after Chef Augusto started in the kitchen – making him the youngest Italian to hold the honour, at just 23. He is now 26.
Lobster and cheese ice cream, anyone?
Quite why the chef received early Michelin appreciation will be seen clearly during his Capital Club debut. Dishes from the seven-course menu include some really interesting-sounding plates: slow-bathed San Remo violet shrimps in raspberry pink sauce; peach and ginger-marinated tuna tartar with amaretti crumb, and langoustine risotto with a Grana Padano ice cream.
Augusto said, “It’s an honour to be working with the team at Capital Club, showcasing my creations to members and the people of the UAE. What I hope to demonstrate is the level of passion I put into all my dishes through each and every carefully-selected flavour.”
The Capital Club will be decorated with a unique collection of limited-edition prints designed exclusively as a celebration of Chef Augusto’s arrival, thanks to the West Contemporary Collective. The art series, called ‘Starchaser Suite’, celebrates the glamour of three iconic Italian stars of the past – Verna Lisi, Gina Lollabrigida and Claudia Cardinale.
“The imagery mirrors the authenticity in Valzelli’s cooking, as it upholds a classic feel, and is produced with traditional screen-printing techniques, yet the pop colours and modern overlays present a more contemporary aesthetic,” a spokesman said.
There are a limited number of spaces available each night for non-members who are interested, so be sure to book ahead.
